Frosted Melted Moments (Exploding Cookies)

Ingredients

    Cookies
  • 1 cup butter
  • 1/3 cup powdered sugar
  • 1 teaspoon almond extract
  • 3/4 cup cornstarch
  • 1/8 teaspoon salt
  • 1 cup flour
  • Frosting
  • Milk
  • Powdered Sugar
  • Almond Extract

Instructions

    Cookies
  1. Preheat over to 375º.
  2. Cream butter and sugar. Add almond extract and blend in dry ingredients.
  3. Chill 2 hours.
  4. Shape into small balls, about 1 inch.
  5. Bake for 12 minutes or until lightly browned.
  6. Cool and frost with powdered sugar frosting (below).
  7. Frosting
  8. Mix ingredients to desired thickness (hint: use a LOT of sugar and a little milk. Add milk or sugar to adjust consistency as needed).
  9. Frosting should be thick.
  10. Add a small amount of extract, adjust to taste.
  11. Frost cooled cookies and top with red and green sprinkles.

These cookies do just as the name implies, one bite and they explode in your hand. These were a staple in our holiday cookie baking as I was growing up, but have been missing during the past few years. This year my sister Cassie, with her 7 week old little boy in tow, decided to bring them back. They are probably her favorite Christmas cookies. In. The. World. They are light, fluffy, sweet and best of all they make a huge mess when you eat them.

They look delicious! I will have to try this. They also look nice and moist… better than mine turn out most of the time.
