Chocolate Haystacks

Yes, I know, Christmas is over. But I just had to share one last cookie recipe from our cookie mania weekend. I’m not sure if there really qualify as cookies, but until someone tells me differently, that’s what I’m going to call them.

These are so easy, you don’t even have to turn on the over. So chocolaty, so sweet that you won’t be able to stop eating them. And best of all, you can easily modify the recipe to make it your own. Add some stick pretzels to the mix. Of almonds instead of peanuts. Or add more peanuts. Sprinkle so red and green sprinkles on top. Or decorate with mini M&M’s to make them look like bird’s nest. It’s up to you how creative you want to get.

Chocolate Haystacks

Ingredients

  • 2 cups semisweet chocolate chips
  • 2 cups butterscotch chips
  • 12 ounces peanuts
  • 5 (5 ounce) cans chow mein noodles

Instructions

  1. Melt the chips the microwave (melt slowly and stir often to avoid burning).
  2. Stir in the peanuts and the noodles.
  3. Drop by teaspoonfuls (or larger!) onto waxed paper-lined cookie sheet.
  4. Cool and then store covered in the refrigerator.

I haven’t had these in YEARS. Thanks for sharing the recipe. I bet my kids will flip for them!
