Meal Plan 04.19.10

The first week of my 4-week Gluten Detox was, well, challenging. By day 2, I was ready to give up. My first batch of bread was just terrible. The second batch, was inedible. I can’t seem to find good recipes for gluten-free crackers or pretzels, and I was hesitant to just buy them. I love to bake, it’s soothing to me. But I finally broke down and picked up a few snacks. They saved the week! Yes, they were a little on the pricey side, but when I’m snacking I’m a much happier momma. Which also makes for a happier family.

The other saving grace was the pizza crust recipe. It was a little tedious to make, and took a LOT longer than I anticipated, but it was super tasty. This is something that I would eat even if I wasn’t doing the gluten detox.

Monday: More leftovers from Slow Cooker Taco Soup (Allrecipes.com)
Tuesday: Tomato and Garlic Soup (AldiMeals.com)
Wednesday: Leftovers of some sort, I’m feeling lazy this week
Thursday: Baked Tofu Bites (AllRecipes.com) with rice noodles
Friday: Homemade pizza on a gluten-free crust (Epicurious) and homemade sauce (AllRecipes.com)
Saturday: Spinach and Feta Turkey Burgers (AllRecipes.com) on homemade corn tortillas
Sunday: Bacon and Egg Quesadillas ($5Dinners.com)

As usual, I’ll also be putting together some of my Super Energy Granola Bars, (modified to be gluten-free). Homemade Crackers (for the kiddo) and these graham crackers (also for the kiddo) which are almost too good. Almost.

Alli,
Consider baking already gluten free snacks: macaroons, peanut butter or nut butter cookies (generally ~ just 1 cup nut butter, 1 egg and 1/2 cup sugar or honey). No funky flours to get used to…
I still suggest Chebe bread, you can make awesome cinnamon rolls! Make some trail mix: raisins, walnuts, pecans, cashews,CHOCOLATE…whatever :)

It sounds strange…but I really enjoy soft corn tacos with nuts raisins and cheddar, heated on a cast iron skillet till crispy and bubbly…mmmmmmmmmmm…I came up with this concoction while pregnant ;) but it IS yummy!

My Mom made nut candy when we were young: nut butter, honey and powdered milk (if not lactose intolerant) (can’t remember amounts…~ 1 cup nut butter, ~ 1/3 cup honey, powdered milk till not sticky. Flatten and cut into bars. If you are lactose intolerant you can substitute ground nuts for powdered milk…no need to by expensive nut flour, just stick the nuts in the blender.

If you want inexpensive CRUNCH, pick up some soft corn tacos, cut rounds in quarters, toss with 2-3 Tbs olive oil or grapeseed oil and spices, line foil covered baking tray with corn taco quarters, place in 350 degree oven till crispy (they will harden somewhat when they sit out). You can then top with shredded chicken, cheddar, and peppers for fresh nachos or pair with guacamole or pico de gallo! Hope this helps.

@hippie4ever, You are my hero. Seriously, I’m so thankful for the information you’ve sent. I made a batch of corn tortillas last week, and they have been a life saver. I’m going to make a double batch, turn some into chips and use the rest for lunches. I think I like these even better than bread. :-)

If making nachos stick back in oven for few minutes to melt cheese.

Alli, you can also use those corn chips as crackers, they are a lot more stable than store bought corn chips. Put a slice of cheese, jalapeno, avocado etc. and crunch away :)
