Seriously, is it really May? I’m not entirely sure how that happened. But I think it. The days are long, the weather is warm and sunny. Who could complain about that?
As each month comes to an end, I always have the intention of planning out my meals one month in advance. Can you image, only one day of meal planning for the month? Sounds like heaven to me. Alas, I never seem to get it done. Maybe next month?
Oh, and I’m back to eating normal. In case you missed it, I totally failed at my Gluten-free diet. But I learned a lot, so it was totally worth the effort.
Here’s what we are cooking up for the week.
Monday: Cambell’s Chicken and Broccoli (AllRecipes.com) I’m totally making it this week!
Tuesday: Chicken Spinach Soup (Joy In My Kitchen) Yes, I know it’s practically summer, but this soup just sounds so yummy.
Wednesday: Bacon and Egg Quesadillas ($5Dinners.com)
Thursday: Baked Tofu Chicken Bites (AllRecipes.com) with rice noodles
Friday: Homemade pizza on my pizza crust and homemade sauce (AllRecipes.com)
Saturday: Going out for an early Mother’s Day Dinner
Sunday: Leftover pizza
Mother Day’s Breakfast: the in-laws will be in for a visit this weekend. To avoid fighting the crowds at restaurants, we’ll be making a yummy breakfast pizza. Hopefully we can get the recipe from our friend, otherwise we’ll use this this breakfast pizza recipe instead. And I’ve been looking for an excuse to make cinnamon rolls, maybe I’ll give these White Whole Wheat Cinnamon Rolls a try too.
