First and foremost, HAPPY MOTHER’S DAY!
We’re spending the morning with the in-laws. Well, actually, Eli is spending the morning with them. I’m enjoying some peaceful blogging time. For dinner we’re heading to my mom’s house for lasagna (mmmmm) and lemon bars for dessert.
Since it’s mother’s day, I want to give a shout out to my mom for instilling a love of cooking in me. Even though I didn’t actually realize it until I became a SAHM, I LOVE cooking. Especially baking. I’m getting hungry just thinking about it.
And to Dad-oo’s mom, for raising such a wonderful, thoughtful and caring man. He’s such a good husband, a fantastic father, and my best friend. Wait, this isn’t Father’s Day, why am I gushing about him?
Of course I can’t forget the one who made this into Mother’s Day. My handsome, sassy and lovable little boy. Who showered me with chocolate and kisses today.

Here’s what we are cooking up for the week.
Monday: Various leftovers from last week
Tuesday: Pretzel Crusted Chicken Fingers
Wednesday: Chicken, spinach and pinto bean wraps
Thursday: Baked Tofu Chicken Bites (AllRecipes.com) with rice noodles
Friday: Homemade pizza on my pizza crust and homemade sauce (AllRecipes.com)
Saturday: Leftover pizza
Sunday: French toast – it’s been a while since we’ve had brinner.
As usual, I’ll also be putting together some of my Super Energy Granola Bars. Homemade Crackers and some graham crackers. And of course my Wheat Germ, Flax Seed Bread.

I just found your blog the other day and am loving it! I really enjoy the recipes for homemade things. I’m hoping to try the graham crackers and crackers this week.
This week we’re eating:
–pizza
–bbq hamburgers, baked beans, corn
–pineapple glazed ham, green beans, blueberry muffins
–chicken pot pie, fruit
–tacos, seasoned black beans (my first attempt at cooking with dry beans!)
–grilled white fish, broccoli w/ cheese, dinner rolls
–leftovers/eat out

Your meal plan sounds great. We haven’t grilled fish in a long time, I need to add that to my plan soon.
