Inside-Out Peanut Butter Cups, Giveaway & Meal Plan

I’ve talked about Tropical Traditions before. Raved actually about their coconut oils. We’re still using them, and when we finally use up the huge jars, we’ll be ordering more.

Well, I had the opportunity to pick another product to try out, and I jumped at the Coconut Peanut Butter. I love peanut butter. The kiddo loves peanut butter. Dad-oo loves peanut butter. We couldn’t lose.

When I received the jar last week, I quickly jumped to Tropical Traditions recipe site, Free Coconut Recipes. I needed something indulgent to make with it. Or maybe I was having a bad day and needed a sweet treat. Either way, I found these.

The recipe couldn’t have been simpler. They were super easy to make and on-my-goodness, just like the peanut butter itself, they are rich and indulgent. I can’t wait to make PBJ sandwiches with this stuff.

Inside-Out Peanut Butter Cups

Semisweet chocolate chips, as needed (start with 1/2 cup)
Tropical Traditions Coconut Peanut Butter, as needed

Line a muffin tin with 12 paper liners, or 12 Silicone Reusable Muffin Liners.

If your coconut peanut butter is solid, just place the jar in a bowl filled with hot water so it will become a runny consistency. Pour coconut peanut butter into a muffin pan lined with paper cups, just enough to make a bottom layer, abut 1/4″ thick.

Melt the chocolate chips in the microwave, stirring occasionally until smooth and completely melted. Spoon the chocolate into each paper cup (it’s the middle of your inside-out ‘coconut’ peanut butter cup).

Drizzle more coconut peanut butter over the top. Pop the pan into the freezer or fridge for just a few minutes so they can harden.

Here’s what we are cooking up for the week.

Turkey, Hummus and Cheese Paninis
Thursday: Chicken in Tomato Vinegar Sauce (Aldi Meals)
Friday:
Pizza with my breadmachine pizza dough and homemade sauce (AllRecipes.com)
Saturday: Leftover pizza
Sunday: Turkey brats on the grill

As usual, I’ll also be putting together some of my Super Energy Granola Bars. Homemade Crackers and some graham crackers. And of course my Wheat Germ, Flax Seed Bread.

I am so terrible at meal planning because what I cook/eat largely depends on my mood and level of energy at the time. So if I planned an elaborate meal and came home from work exhausted, I have to improvise, and I find that I’ve been doing that quite a bit. So there goes the meal plan!

It’s still really admirable and I’d like to be able to stick to one some week. Quesadillas are great week night meals and the brats (or any sausage) on the grill is a fave in our house too. My Guy’s specialty, which he makes with sauteed peppers and onions. Yum!

Those look so yummy! I have used the Spectrum coconut oil but I would love to try the Tropical Traditions – and it looks like it is more economical too! The Coconut peanut butter looks fabulous and the recipe link is great!
