Gooey Brownies with Pomegranate Blueberry Glaze

After 3 long weeks, where I just wanted to press fast forward, I was craving something sweet, chocolaty (of course) and ooey, gooey.

Scratch that. I wasn’t craving it. I deserved it.

I NEEDED it.

Playing single parent is no fun at all. Even when I found so joy at the end.

So I checked around on Twitter for the best brownie recipe around and Tiffany sent me this recipe for perfect brownies.

And they are perfect. Except. For three things.

  1. A 9×9 pan is not nearly large enough when it comes to brownies.
  2. I don’t have rose water.
  3. I really, really needed a reason to try out a pomegranate-blueberry syrup.

Plus, by using POM Wonderful blueberry-pomegranate juice, this recipe is pretty much a health food. OK, not really, but pomegranate juice is full of antioxidants, which are oh so healthy. In fact, you can read more about antioxidants on POM Wonderful’s web site. Some of the best articles include:

And so, this is my now perfected recipe. Seriously. It’s perfect. I dare you to say otherwise.

Gooey Brownies with Pomegranate Blueberry Glaze

  • 1-1/8 cup unsalted butter-melted
  • 2-1/4 cup sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1-1/8 cup flour
  • 3/4 cup cocoa
  • 3/8 tsp salt
  • Add in chocolate chips or your favorite nuts if you like. Although the brownies are sinful with out it.
  • 1/2 cup POM pomegranate-blueberry syrup {recipe below}

Preheat oven to 350º. Grease a 9×13 pan.

In a small bowl combine flour, cocoa powder and salt.

In a mixer, cream together sugar and melted butter until smooth. Add eggs one at a time, beating well. Add vanilla. Mix in dry ingredients.

Spread in the greased pan. Drizzle POM syrup in lines on top of the batter. Drag a knife across, creating a pretty pattern.

Bake for 25-30 minutes. Leave them slight under cooked for the ooiest, gooiest brownies ever. EVER!

For an extra special treat, poor some remaining pomegranate-blueberry syrup over the brownies before serving.

POM Pomegranate-Blueberry Syrup

  • 1 cup POM Wonderful Pomegranate-Blueberry juice
  • 3/4 cup sugar

In a small sauce pan, combine juice and sugar. Bring it to a boil. Reduce heat and simmer about 20-30 minutes, stirring often. Reduce to 1/2 to 1 cup. Allow to cool.

This is also good on ice cream {chocolate of course}, on peanut butter sandwiches or cheesecake.

Meal Plan

We have an abundance of farm fresh tomatoes, cucumbers and baby potatoes from some very generous friends. Who also let us borrow their steam cleaner after the toddler undies incident. {More on that later this week}. Which is oh so nice for our grocer budget, since we’ll be living off of those for a while. Plus, not I get to practice stocking up. It’s a win win!

Toddler Lunches

Monday: Peanut butter and banana grilled sandwiches (Wholesome Toddler Food)
Tuesday: Grilled cheese. Side of peas.
Wednesday: Cucumber Dill Pasta Salad (AllRecipes.com)
Thursday: Tortilla Roll Ups. Side of sliced apples.
Friday: Hummus pizza. Side of carrots. (AllRecipes.com)
Saturday: Hot Dogs {don’t judge!}. Side of peas and corn.
Sunday: Leftovers

Dinner

Monday: Cucumber Dill Pasta Salad (AllRecipes.com)
Tuesday: Nachos with homemade salsa
Wednesday: Tomato Cucumber Salad (AllRecipes.com)
Thursday: Leftover buffet
Friday: Pizza with my beer batter pizza dough and homemade sauce (AllRecipes.com)
Saturday: Leftover pizza
Sunday: Pork tenderloin on the grill with baby red potatoes

I’ll also be putting together some of my Super Energy Granola Bars, Crackers and Graham Crackers, and Wheat Germ, Flax Seed Bread.

Woo-hoo! With this syrup, I can tell myself that these brownies are healthy and something I should eat on a daily (if not hourly) basis!

That’s exactly what I’ve been telling myself, as I secretly snack on them through out the day. They are SO addicting. I’ve never had a homemade brownie quiet like this.

These brownies look awesome. I have been craving brownies lately, like I need to eat more sweets….but if they had blueberry pomegranate glaze…..hmmm.
BTW, I’ve made your beer batter pizza dough twice now, and it’s amazing!

Chocolate brownies are my favorite. Mixed in chocolate ice cream to die for! A little whipped cream… The gooeyer the better!
