There are less than five weeks until Christmas. Which means:
- Your Christmas shopping is totally done
- Your tree is up and decorated
- Your cookies are made
*snort*
If anyone has all of these things done, well, please come over to my house. You can decorate and finish my shopping. I on the other hand, will be making cookies for the next 4 weeks.
Because that’s what I do. I make cookies. And eat them occasionally.
I. Heart. Cookies. With a passion. {As if you didn’t know that already}
So. For the next 4 weeks I’m sharing some of my favorite Christmas cookie recipes. I’m not sharing the cookies, because there isn’t a WordPress plugin for that. Yet. I have my elves working on it.
Nothing says Christmas to me like chocolate and mint. There is no other time of the year that you can get a peppermint mocha. No other time of the year when you can find mint M&M’s in the stores. Which makes me sad. Because sometimes, in the middle of summer, mint M&M’s would really hit the spot.
So today, I’m sharing a fan-freaking-tastic recipe combining chocolate and mint. Actually, it’s a two-for-one recipe. One with dark chocolate and mint chips. One with mint truffle kisses.
Mmmmmm, can you just about taste them?
Ingredients
- 2 cups all-purpose flour
- 2/3 cups baking cocoa
- 1/2 teaspoon salt
- 1 cup butter, softened
- 2/3 cups granulated sugar
- 2/3 cups packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 10 oz bag Toll House Dark Chocolate & Mint Morsels
Instructions
- Preheat oven to 325 degrees.
- In a small bowl combine flour, cocoa, baking soda and salt.
- In a large bowl beat until creamy the butter, granulated sugar, brown sugar and vanilla extract.
- Add the eggs, one at a time, beating well after each addition.
- Gradually beat in the flour mixture.
- Stir in morsels.
- Drop by well rounded tablespoons onto ungreased cookie sheets.
- Bake for 8-10 minutes, or until the cookies are puffed and the centers are set.
Ingredients

- 2/3 cups granulated sugar
- 2/3 cups packed brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 bag Mint Truffle Hershey's Kisses
Instructions
- Preheat oven to 325 degrees.
- In a small bowl combine flour, cocoa, baking soda and salt.
- In a large bowl beat until creamy the butter, granulated sugar, brown sugar and vanilla extract.
- Add the eggs, one at a time, beating well after each addition.
- Gradually beat in the flour mixture.
- Roll dough into 1.5 inch balls and place onto an ungreased cookie sheet.
- Bake for 8-10 minutes, or until the cookies are puffed and the centers are set.
- While cookies are baking, unwrap mint truffle Hershey's kisses. Eat a few. It's good luck.
- When the cookies are done, immediately place a Hershey's kiss in the center of each one.
- Allow to cool completely before removing from the pan.

Friday: Homemade pizza on beer battered crust and homemade sauce. {AllRecipes.com}
Saturday: Leftover pizza

My favorite Christmas cookie is a pecan crescent. SO yummy. So addictive. So not in my house until the very day before Christmas and then not again until the next year.
I’m not a fan of pecans, but I know what you mean. The second our house is filled with cookies I have to hide them, or they will all be gone in a matter of hours.

You have single-handedly brought heaven to my eyes by posting those decadent photos. I am being a ‘good girl’ for a few more days after traveling to KY for Thanksgiving for the best dawg-gone southern meal I’ve had in a very long time. Oh….yea…..I am making these….maybe tomorrow. I bet I could freeze this dough….pull it out when I need a chocolate treat….or….maybe I will share them. Hmmmmm
I froze about half of the dough, I’m saving it until right before Christmas. I did form it into balls before freezing, just because it’s easier.
These just look delicious. I only like mint and chocolate at Christmas for some strange reason, so I think I will be making these soon!
