If you listen hard enough you can just hear Santa’s sleigh groaning under the weight of all the presents. His elves are working themselves to the bone loading that thing. And all of the reindeer are filling up on energy drinks, just to get them through Christmas Eve. They have a lot of work ahead of them.
I don’t know about you, but I have my plate full of cookies all ready for the big guy. Who will have to come through our front door, since the chimney goes directly into the furnace. Ouch, that would be an unwelcome surprise. Assuming that no one cleans out the plate before the big night, here’s what we’re serving:
- Cutout Cookies
- Dusseldorf Cookies
- Chocolate Mint Delight and Chocolate Mint Kiss Cookies
- Peanut Butter Kiss Cookies
- Hot Chocolate Snowballs
- Chocolate Haystacks
- Molasses Cookies
- Andes Creme de Menthe Chunk Cookies
- Frosted Melted Moments (Exploding Cookies)
I’m pretty sure that Santa is going to be thirsty, and he might just need something to help get him through the night, if you know what I mean. So, we’ll also be serving up some lovely beverages for him to drink.
I have to admit, I have one last Christmas cookie recipe to share. And there are at least 3 more recipes that I didn’t even get to try this year. Sad Christmas. I guess I’ll just have to make them some other time during the year. I mean, cookies aren’t only reserved for Christmas are they? No, I think not.
Plus, these cookies are kind of healthy. I mean, they have oatmeal and craisins. Seriously, what isn’t healthy about that? Oh, maybe the white chocolate chips. Whatever, I’ve decided that chocolate of all kinds is now healthy. Mainly because I couldn’t live without it.
And so, here’s my final Christmas cookie recipe of the year. All wrapped up in a little bow, just for you.
Ingredients
- 2/3 cup butter, softened
- 2/3 cup brown sugar
- 2 large eggs
- 1-1/2 cups old-fashioned oats
- 1-1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 6 oz package Craisins
- 2/3 cup white chocolate chips {OK, seriously use more, because it's chocolate}
Instructions
- Preheat oven to 350 degrees.
- Using an electric mixer, beat butter and sugar together in a medium mixing bowl until light and fluffy.
- Add eggs, mixing well.
- Combine the oats, flour, baking soda and salt in a separate bowl.
- Add to butter mixture slowly, mixing well.
- Stir in Craisins and white chocolate chips.
- Drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake for 9-11 minutes or until golden brown.
- Cool on wire rack.

Saturday: Homemade donuts for Christmas morning, leftover pizza for dinner
Sunday: Spicy Black Bean Soup {AllRecipes.com}
