Welcome 2011! It’s freaking freezing outside. We have like a week of almost Spring-like temperatures, which in Wisconsin means above freezing. But apparently Mother Nature was just teasing us, as the wind chills have now reached below zero status.

With the cold weather comes a need for HOT foods. Foods that fill you up and warm you up from the inside out. And something other than the millions of cookies devoured during the last few weeks.
Yes, I ate roughly one million cookies.
So for the month of January, maybe longer, each week I’m sharing a favorite soup recipe. What better way to start off than the Wisconsin way, with cheese.
Broccoli and Cheese Soup
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 – 12 oz bags frozen broccoli
- 1 medium-sized potato, skin on, diced
- 1 cup carrots, chopped
- 5-6 cups chicken broth
- 2 cups shredded cheddar cheese
- 3/4 cup sour cream {buttermilk, plain yogurt or whole milk will also work}
In a large saucepan over medium heat, warm the olive oil. Add the onion and garlic and cook until softened, about 5 minutes. Add the broccoli, potato, carrots and chicken broth, raise the heat to high, and let come to a boil. Reduce the heat, cover the saucepan and let simmer until the broccoli, carrots and potato are softened, about 7-10 minutes.
Let the broccoli mixture cool slightly. Using either a blender or food processor and working in small batches, or an immersion blender, puree it until smooth.
Return the soup to the saucepan and add cheese and sour cream. Cook over low heat until the cheese melts {do not let the soup come to a boil}, about 3 minutes. Season with salt and pepper to taste. Pour the soup into bowls and top with additional cheese if wanted.
Enjoy with your favorite crusty bread and a salad for a complete meal.

That sounds like my kind of soup!
I LOVE broccoli cheese soup. We’ve had it in bread bowls with company and it’s always a hit.
My favorite soup is absolutely diet UNfriendly, but we only eat it a few times a year.
It’s been colder than a witch’s t#t in my neck of the woods–this sounds like the perfect antidote. Happy New Year!

Oh yum, this is my kind of soup! I love cheese! I’ve made broccoli cheese soup before but didn’t add the extra veggies like potatoes and carrots. I’ll have to try that next time!
