Butternut Squash Soup with Ravioli

I’m just popping in for a second, because nothing, not even Seattle could stop me from sharing today’s recipe.

For the last few months I’ve been trying out new soups. Because I love soup. And because I dedicated January to soup month and just couldn’t let everyone down. So really, I’ve been experimenting, tasting and enjoying for you all. It’s a completely selfless act.

Or something.

I love a good creamy soup. Chicken dumpling topping the list, followed closely by any other creamy soup. Except chowders. Those are just gross. When I came across this recipe for Butternut Squash Soup with Cheese Ravioli I was skeptical, but curious. Cheese pasta with a sweeter soup? I guess it could work, sweet and savory, right? So I tried it. We ate it. And then I made it again to freeze. Because it was just that good.

Seriously. I’m drooling just thinking about it.

Butternut Squash Soup with Ravioli

Adapted from AllRecipes.com
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter
  • 1 cup sliced onions
  • 3/4 cup sliced leeks
  • 1 butternut squash, peeled, seeded and cubed
  • 5-1/2 cups chicken broth
  • 1 pinch ground cinnamon
  • 1 pinch ground ginger
  • 1 pound cheese filled spinach ravioli
  • 1/2-3/4 cup light or heavy cream
  • salt and pepper to taste

Place the butter, cumin, nutmeg, onions and leeks in a large saucepan over medium heat. Saute until tender. Mix in squash and chicken broth. Season with cinnamon and ginger. Reduce heat, and simmer 10 to 15 minutes.

While the soup is simmering, bring a large pot of lightly salted water to a boil. Add ravioli, and cook as directed on the package; drain.

With a in a blender or using a hand mixer, puree the soup mixture. Blend in cream, and season with salt and pepper. Mix in the cooked ravioli just before serving.

Veggie quesidillas
Friday: Homemade pizza on beer battered crust and homemade sauce {AllRecipes.com}
Saturday: Leftover buffet
Sunday: Belgium waffles

I love creamy soups too (we LOVE chicken and dumpling soup as well as chicken and rice soup) so I might have to try this one.

Oh yum, this is delicious! I have a butternut squash soup recipe that I LOVE LOVE LOVE and it’s on the menu plan this week. What a cool idea to add ravioli to bulk it up! Or maybe tortellini too? Mmm delish! Thanks for sharing this with Friday Firsts!
