Sweet Tooth Friday: Soft and Chewy Chocolate Chip Cookies

Last year when we were trying to sell our house, I made a batch of freshly-baked cookies before each showing. This served two purposes. It upped my stress level because while trying to clean the house, I was actually making a giant mess. True this mess resulted in delicious cookies, but it was still another mess that I had to clean.

The second purpose was the that house smelled like delicious cookies during the showings. Which I hoped would trick buyers into thinking that there were always freshly baked cookies in the house, magically. But apparently buyers are smarter than that, because none of them bought our house.

So this year I decided not to make cookies for each showing. We would not be the “cookie house” this year. I’m OK with that. That is, until our first open house came around. I wanted to be the cookie house. I needed to be the cookie house. And so, I baked two batches of cookies the night before the open house. Time to clean before the showing, time to sample a cookie {or 500 hundred}.

Soft and Chewy Chocolate Chip Cookies

Of course, I’ve also been looking for an excuse to make a new treat from the Hershey’s Recipe Collection Cookbook book that I’ve been drooling over {and sometimes into} for the past few weeks. This, finally, was my excuse.

So, after ear-marking about 30 different recipes, I finally, finally narrowed it down to two. The rest will just have to wait for a different day. I’m sure I can come up with an excuse or two for making cookies again. Soon. Real soon.

Chewy Chocolate Chip Cookies

Soft and Chewy Chocolate Chip Cookies

  • 1 cup (2 sticks) butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 12 ounce package chocolate chips {about 2 cups}

Preheat oven to 350ยบ.

In a small bowl stir together the flour, baking soda and salt.

In a large bowl beat together the butter and sugars together until fluffy. Add the corn syrup, egg and vanilla, beating well.

Gradually add the flour mixture to the butter mixture, beating until well blended. Stir in the chocolate chips . Drop by rounded teaspoons onto ungreased cookie sheets.

Bake for 8-10 minutes {13-15 minutes for large cookies}, or until lightly browned and almost set. Cool slightly. Transfer to wire rack and cool completely.

Be patient! The cookies will be softer the second day.
