What Do You Do With Leftover Ham from Easter? Make Ham Linguine

Before I forget I’m over at MomSquawk today talking about how raising kids is a lesson in growing up ourselves. Please stop by and leave a comment, or three, you just may help me earn a paid blogging gig.

With Easter comes leftovers. Ham. Potato salad. Green beans. Dessert. Chocolate eggs. Peeps.

Okay, okay, you got me. There are never any leftover chocolate eggs. Never. Unless of course there’s a bag that I some how forgot about, hidden deep in the kitchen cupboards. But that rarely, if ever, happens. Me? Forget about chocolate? I don’t think so.

Anyway, back to the ham. I hate throwing food away. I know when there are leftovers in the fridge and they haunt me until I either bribe Hubs to take them to work, have them for dinner, or finally, painstakingly, throw them away. I hate throwing food away so much that it often sits in the fridge for far too long. Until the only thing it resembles is fuzz and has been renamed as “the smell coming from the fridge.”

After a busy Easter, even if I wasn’t the one doing all of the cooking {we do it pot luck style, yo} I like to keep the meals for the following week easy. All of that food in one day, in one meal, kind of turns me off from cooking for a while. So I stick with recipes that use up leftovers, are quick, and of course super tasty.

Ham Linguine

I wouldn’t eat something unless it was super tasty. Unlike Hubs, who eats anything, even if he doesn’t really like it. Weirdo.

This recipe is one of my favorites. I used to request it from my mom. In fact, after we had the kiddo, this was the meal I asked her to make for us. For whatever reason, I don’t make it very often myself. I don’t know why. But now that I’ve dug it out of the old recipe box, errr binder, I think it will be in heavy rotation in our meal plans.

Ham Linguine

Ham Linguine

  • 1 package (16 oz) linguine or spaghetti
  • 2-4 minced garlic cloves
  • 1/4 cup olive oil
  • 8 oz cooked ham, cut into strips
  • 8 oz Monterrey, Farmers or Mozzarella cheese, cut into cubes
  • Fresh or dried parsley, to taste
  • Fresh grated Parmesan, to taste
  • Salt and pepper, to taste

Cook pasta according to package directions.

While pasta is cooking, in a large skillet saute garlic in olive oil for 1 minute. Stir in ham and cook until heated through, about 2 minutes. Season with salt and pepper.

Drain the pasta and toss with the ham mixture. Stir in cheese cubes. Sprinkle with Parmesan cheese and fresh or dried parsley.

Serve with a salad and some very buttery garlic bread.

Monday: Chickpea burgers with ricotta sauce on homemade dinner rolls
Tuesday: Mediterranean Barley Salad {FoodNetwork.com}
Wednesday: Baked Penne
Thursday: Roasted Cauliflower Quiche
Friday: Homemade pizza on beer battered crust and homemade sauce {AllRecipes.com}
Saturday: Leftovers
Sunday: French toast

Why, why, WHY can’t I eat at your house all the time? You know what I had for dinner last night? Anything laying around the house. Some black beans, some grapes, some popcorn, some goldfish. I call it “scavenging” and like to pretend its an actual meal. By dinner time I was too full from scavenging to want a real meal. Sad.

Yea, I’ve been there too. Especially when Hubs is traveling and I’m left to feed myself. It often includes more chocolate than it should. *blush*
