I love cinnamon rolls. Actually, I love making cinnamon rolls. Kneading the dough, spreading the filling, rolling everything together. And breathing the luscious scent of cinnamon rolls baking to a golden brown in the oven. First thing in the morning.
Is there a better way to start out your day?
The only thing is that traditional cinnamon rolls require time. A lot of time. As in you have to make everything the night before. Well, that just won’t do some mornings when all I want is a cinnamon roll. I would kill for a cinnamon roll.
Don’t even think about getting in the way of a pregnant lady and her cravings.
So I scoured the interwebs and combined a few of the best no-rise cinnamon rolls to get this recipe. Even better than the best. At least I think so.
Of course, a sweet treat isn’t complete without a touch of chocolate. Just a hint lurking in the cinnamon filling. All topped off with a cream cheese frosting. Divine.
Ingredients
- 1/3 cup melted butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 3 teaspoons ground cinnamon
- 2 tablespoons unsweetened cocoa powder
- 2 cups flour {I used white whole wheat}
- 2 tablespoons granulated sugar
- 1-1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup melted butter
- 1 cup buttermilk
- 1/2 cup semisweet chocolate chips
- 1/2 cup powdered sugar
- 3 tablespoons buttermilk
- 3 tablespoons softened cream cheese
Instructions
- In a small bowl combine the melted butter, sugars, cinnamon and cocoa powder. Set aside.
- Preheat oven to 400 degree. Spray an 8" x 8" or 9" x 9" pan with non-stick spray.
- In a large bowl combine the flour, sugar, baking soda, baking powder and salt.
- Stir in the melted butter and buttermilk to form a soft dough.
- Turn the dough out onto a well floured counter top. Knead 8 to 10 times, adding flour if necessary.
- Using a floured rolling pin, roll the dough into a rectangle about 1/3-inch thick and 12 inches long.
- Evenly spread the cinnamon-chocolate mixture on the dough and sprinkle with the chocolate chips.
- Starting with the long end, roll the dough.
- Cut into 12 even slices and place cut side down on prepared pan.
- Bake in 400 degree oven for 20 to 25 minutes, until golden brown. Allow to cool slightly, then turn out onto a plate.
- While the rolls are cooling, combine the powdered sugar, buttermilk and cream cheese in a small bowl.
- Mix until smooth.
- Drizzle over warm cinnamon rolls.

OMG! I have never had worse cinnamon rolls in my life. As I was making them, I noticed the dough was a bit weird, kind of dry, and a bit brittle. I followed the directions to a t and they turned out horrible. Dry, and flaky (not in a good way either) and the flavor was horrible as well. There is literally nothing good about this recipe. I am thoroughly disappointed.
