Quick and Easy Meal: Open-Faced Italian Meatball Sandwich

This is one of those meals that’s so simple, you totally forget about it. And yet it’s one of those meals that you can throw together at the last minute, usually with ingredients you have on hand. Or modify it to use what you have. It’s that easy.

In short, it’s brilliant.

Yes, I just called this sandwich brilliant. And I stand by it.

Open Faced Meatball Sandwich

Forgive me if the measurements aren’t exact. This is kind of a fly-by-the-seat-of-your pants meal. But it seems that no matter what combination of ingredients you use, it’s super duper tasty.

Forgiven? If not, I promise you that you will forgive me when you sink your teeth into one these babies.

Open Faced Meatball Sandwich

Open-Faced Italian Meatball Sandwich

  • 1 loaf of your favorite French bread
  • 6-8 slices Provolone cheese
  • Meatballs
  • Marinara sauce
  • Fresh basil leaves
  • Chopped artichoke hearts

Preheat oven to 375ยบ

Slice French bread open, length-wise, so you have two long pieces of bread. Place meatballs on the bread and top with artichoke hearts. Smother with marinara sauce. Place cheese on top, covering every spare inch. Every. Spare. Inch.

Place sandwiches on a large cookie sheet and bake until the cheese is melted and bubbly, the bread is crispy and the meatballs are hot. Approximately 10-15 minutes, but watch closely.

Top with fresh basil leaves and dive in.

Seriously, dive in. These sandwiches are thick and filled with goodness. And now, I’m drooling.

Friday: Homemade pizza on beer battered crust and homemade sauce {AllRecipes.com}
Saturday: Leftovers
Sunday: French toast
