I love sweet potatoes. Their bright color. Their sweet, tender insides. You can prepare them in roughly 100,000 ways.
Or more. I’m not sure. I haven’t actually counted. I have things to do, you know?
One my favorite ways to eat sweet potatoes is as a chip or fry. When we eat out at a restaurant that serves sweet potato fries, which doesn’t happen nearly often enough, I may do a little happy dance. It involves clapping, giggling and a giddy smile that is plastered to my face until I eat the very last one. That’s how much I love them.
Whenever I can, I grab a giant bag of these babies when they are on sale. We make sweet potato burritos. Baked sweet potatoes. And, by far my favorite, sweet potato chips. Baked, because we only bring out the deep fryer once a year. Christmas, for those deep friend donuts.
Mmmmmm. Donuts.
Don’t let the fact that these are baked let you think that they are tasteless. They are anything but. I may even go so far as to say that they are better than the fried version. Yes, I said it. Better because you can actually taste the sweet goodness that is the sweet potato.
This recipe is supposed feed 4 people, but the last time we made it, I ate most of the chips. No, I’m not kidding.
Hey, I’m pregnant. I can do that. That’s my excuse anyway.
Baked Sweet Potato Chips
- Butter-flavored or olive oil cooking spray
- 2 medium-sized sweet potatoes
- Grated Parmesan cheese, to taste
- Dried rosemary, to taste
- Sea salt, to taste
- Black pepper, to taste
Preheat the oven to 425ยบ F. Coat two large rimmed baking sheets with the cooking spray.
Wash the potatoes then slice into 1/4 inch thick slices. Arrange the slices on the prepared baking sheets in a single layer and spray lightly with the cooking spray.
Bake the sweet potatoes until the tops are slightly brown, about 15 minutes. Flip the chips and continue baking until the second side is lightly browned and the potatoes are tender, about 15 minutes. If you prefer crispier chips, bake longer, but watch carefully, they can burn quickly.
Toss the chips with grated Parmesan cheese, dried rosemary, sea salt and pepper.

I wish my little man would eat more of them. He gets freaked out by the texture sometimes.
I always try to bake sweet potato chips and I either a) don’t cut them thinly enough so they never chip up or b) I burn the crap out of them. It makes me so sad – I’ll have to try it your way and see if I can rock it.
I have admit, these chips don’t get super crispy like normal chips. But I kind of like them that way.
Seriously, whoever thought of sweet potato fries needs to be kissed. Many, many times.

Use a large, sharp knife. Slice the potatoes thinly, about 1/4″. Don’t worry if some are thicker than others, but you may have to remove the thin ones from the oven sooner. Also, practice, practice, practice!
I cut sweet potatoes in half and then microwave them, it’s so yummy! I don’t have the patience to fry them but if I did I hope to get a result like you have
You don’t have to fry this recipe! But it does take some time to bake them. Baked (or microwaved) sweet potatoes are wonderful too.

I love sweet potato fries but they never crisp up. I’ve read a lot on it lately, and several people have suggested coating the raw slices or fries in cornstarch before baking to enhance crispiness. Worth a try!
