When I wake up in the morning, the first thing I do is pee. In case you were wondering.
The second thing I do is figure out how I can sneak some chocolate into an otherwise pretty healthy breakfast. Because I crave chocolate 24 hours a day. I’m so not kidding when I say that it’s the first thing I want to eat in the morning.
I may have a problem.
This recipe originally came from my mom, but I’ve modified it a little over the years. Because I’m like that, I can’t leave good enough alone.
Now I can confidently say that eating these muffins is by far the best way to start off your day. Go ahead, find something that’s better. If you do, send it my way, because I want a bite too.
I mean seriously, how can you not drool over these babies? Maybe this post should have come with a disclaimer: napkin needed at all times.
Chocolate Chip Muffins
- 2 cups flour {I often use white whole wheat}
- 1/2 cup sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup semisweet chocolate chips
- 1 egg, beaten {or substitute 1 tablespoon ground flax seed and 3 tablespoons water}
- 3/4 cup buttermilk
- 1/3 cup canola oil or melted butter
Preheat oven to 375º F. Line 12 muffin tins with paper liners, or spray with non-stick spray.
In a large bowl combine the dry ingredients and chocolate chips. Stir in the egg, milk, oil/butter until moistened. Batter will be lumpy and thick.
Spoon into prepared muffin tins, about 2/3 full.
Bake for 15-20 minutes, or until a tooth pick inserted into the center of a muffin comes out clean.
Variations: Replace the chocolate chips with toffee and chocolate chips, a combination of white and chocolate chips, or cinnamon chips.

Those muffins look amazing! I have a recipe that uses vanilla, but it’s too overwhelming – yours with buttermilk sound like a much better recipe!!
Also…I tried to use the button above the linky list and it didn’t want to work. But the one on the sidebar did work..not sure what was going on…it could just be Blogger being wonky!

So, um, I think it’s totally meant to be that I have a cup of buttermilk left over from baking a cake. I need these muffins! Breakfast tomorrow, for sure.

I made these a week or so ago, and they turned out great. Funny thing was I was in the middle of measuring out my ingredients and got interrupted by my 7 year old, then my 17 year old, then my husband and finally my dad walked in. I lost track of the recipe and thought I had everything measured and ready. My 7 year old helped me put the ingredients in the mixer and away we went. I realized later that I forgot the sugar! They were already a hit, and I’m thinking about how I want to manipulate the recipe a little next time (and remember to add sugar!)
