Okay, I have to admit, the kiddo did not help me make these. Not at all. I tried. There were bright colors. Mixing. And the promise of popsicles…the next day.
That may have been the reason he wasn’t interested, the payoff wasn’t immediate. Of course, the second I was done, then he was interested. Sigh. Kids.
But, he loves, loves the final product. Actually, I love them too. Not only because it’s a fun treat in the middle of a hot summer day, or perhaps during a cookout, say, a 4th of July cookout. I love them because I know what’s in them. They aren’t full of sugary. There’s nothing artificial {although I do have to admit that I added some food coloring to enhance the colors a bit, but that’s totally optional}. And, they are full of calcium. Or they at least have more calcium than a traditional popsicle.
Plus, they are super easy. It does take a couple of hours until the final product is chilling in the freezer, and then a few more hours until they are ready to be slurped, licked or otherwise eaten, but it’s still super easy to put these together. And maybe, just maybe, you can convince your kids to help out. If you’re lucky.
Easy homemade popsicles made with yogurt for a hot summer afternoon.
Ingredients
- 1 envelope (1/4 ounce) unflavored gelatin
- 1/4 cup cold water
- 1/2 cup cold water
- 6 oz raspberry or strawberry yogurt
- 6 oz lemon yogurt {or other white/light colored yogurt}
- 6 oz blueberry yogurt
- Popsicle molds (6-12 depending on the size)
Instructions
- In a small glass bowl or measuring cup combine the cold water and gelatin. Stir to combine and let sit for 5 minutes.
- While sitting, boil water {boil more than 1/2 cup, incase some evaporates while boiling}. Pour 1/2 cup of the boiling water into the gelatin mixture. Stir until completely disolved. Let stand for 10 minutes.
- First layer: In a small bowl combine the raspberry yogurt and 1/4 cup of the gelatin mixture. Stir until completely blended. Fill each popsicle mold 1/3 full. Freeze for 30 minutes to set.
- Second layer: After the first layer has set, in a small bowl combine the lemon yogurt and 1/4 cup of the gelatin mixture. Stir until completely blended. Fill each popsicle mold 1/3 full. Freeze for 30 minutes to set.
- Third layer: After the second layer has set, in a small bowl combine the blueberry yogurt and 1/4 cup of the gelatin mixture {by this time the gelatin mixture will have thickened a little, that's okay}. Stir until completely blended. Fill each popsicle mold 1/3 full. Freeze for 30 minutes to set.
- Cover each popsicle mold with the top and freeze for at least 2 to 5 hours.
- To remove the popsicles from the molds, briefly run the bottom of the mold under hot water, until they have loosened enough to pop out of the mold.
Notes
If you don't have popsicle molds, 3-ounce paper cups and popsicle sticks can be use. Follow the directions above. Freeze the cups, with all three layers, for 1 hour, then insert the popsicle stick into the center of each cup. Freeze completely. When ready to eat, simply peel off the cup and serve.

This is just the sort of thing we are going to need during the summer when the kids are at home and need to cool off at the end of the day. We always have a variety of yogurts in the fridge so I’m going to have fun trying to come up with different colors each time.

My Daughter’s birthday is on the 4th of july-I was thinking about Making these…How many did these make? I need to make probably close to 50 of them.. so i am trying to figure out the best option ..I have to balance time/prep/ other stuff i have to make.. and if i can keep them frozen..
It really depends on the size of your popsicle molds. This recipe made about 10 for me. You could make 5-6 batches for 50 I would think. If that makes too many, at least you can enjoy the leftovers during the summer.
