It’s rewarding when my son joins me in the kitchen to make meals or snacks. It’s rewarding to see him dig in and get his hands messy, just so he can be part of the process.
It’s rewarding even when I have to trick him into helping, by telling him that he is in no way, shape or form allowed to help me. And then, he’ll do any thing in his power to help.
Three-year olds are funny like that.
You know what else is rewarding? Hearing your son claim, with much determination, that he does not like pumpkin. No way. No how. He does not like pumpkin.
All of this happens while he is inhaling, inhaling, his lunch. Which happens to be a peanut butter and pumpkin sandwich. The very same sandwich that he just helped craft. The very same sandwich that, has now disappeared from his plate. And he’s pleading, begging, for another.
Obviously, he doesn’t like pumpkin. I mean really, what was I thinking?
The good news about this sandwich, is that it’s based on a staple in just about every kid’s diet. The peanut butter sandwich. But instead of the normal jelly, which gets rather boring {or at least I think so} there’s a healthier twist. Pumpkin. Good old pumpkin from a can. Not pumpkin pie, although that would be rather tasty too. Just plain old pumpkin.
When mixed with peanut butter {or your favorite non-peanut spread}, a dash of cinnamon and spread on your favorite bread, something magical happens. Just don’t ask my son, because he will tell you that it’s terrible.
Don’t believe a word that he says.
A fun sandwich featuring pumpkin, to sneak veggies into your kids peanut butter sandwich.
Ingredients
- 1/2 cup canned 100% pumpkin
- 1/2 cup creamy or crunchy peanut butter
- Pinch of cinnamon or pumpkin pie spice {optional}
- 4-6 slices of your favorite bread
- 1 banana, sliced in 1/4" pieces
Instructions
- In a small container mix together the pumpkin, peanut butter and cinnamon.
- Spread on half of the slices of bread. Top with the sliced banana, then cover with the remaining slices of bread.
- The leftover pumpkin-peanut butter spread can be covered and stored in the fridge for up to 5 days.

Pumpkin and PB huh? Interesting and I bet it is so good. I like this combo- shall try it out soon with the aka picky eater! LOL!
It’s a great way to sneak in veggies too. I used to do it all the time in waffles, pancakes and muffins. For a while it was the only way I could get him to eat any veggies.
