Frozen Peanut Butter Swirl Pie {A Pie for Mikey}

Last week I saw a tweet go out about a blogger who had just lost her husband. My heart ached, but I didn’t know this blogger, so I didn’t look into it any further.

Then, one of my favorite food bloggers posted a link on Facebook. This time I followed it, to In Jennie’s Kitchen. And it broke my heart. This blogger, a mother of two little girls, suddenly lost her husband to a heart attack.

This can happen to anyone. This blogger, who until last week I didn’t even know of {although I wish that I had because she has some pretty amazing recipes} reached out and grabbed my heart. Because this can happen to anyone. There are no guarantees of tomorrow.

In Jennie’s post, she shared her husbands favorite pie recipe. Creamy peanut butter pie. She had planned on making this pie for him, someday. Don’t we all plan on making something, or doing something, someday?

I kept telling myself I would make it for him tomorrow. Time has suddenly stood still, though, and I’m waiting to wake up and learn to live a new kind of normal. For those asking what they can do to help my healing process, make a peanut butter pie this Friday and share it with someone you love. Then hug them like there’s no tomorrow because today is the only guarantee we can count on.


So, even though I don’t know this blogger, her story touched me and broke my heart. The least I can do is make a peanut butter pie and share it with the loved ones in my life. Well, maybe not all of them, that would be a lot of pies. But the boys and man in my life, the ones that are my rock, my constant source of strength and love. I can make it for them. Hubs loves anything with peanut butter.

Frozen Peanut Butter Swirl Pie

Frozen Peanut Butter Swirl Pie

Chocolate, peanut butter and a graham cracker crumb crust, all frozen for a delightful summer pie.


  • 1/2 cup creamy peanut butter
  • 3 ounces reduced fat cream cheese, at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup skim milk
  • 1 8 ounce container frozen light whipped cream, thawed
  • 1 deep-dish graham cracker crumb crust {I couldn't find this at my grocery store, but there was a larger crust size which worked well}
  • 1 cup semi sweet chocolate chips, divided


  1. In a small microwave-safe bowl, add 1/2 cup chocolate chips. Microwave on high for 30 seconds, then stir. Microwave on 50% power for 15 seconds, stirring, until the chocolate chips have melted. Pour over the bottom of the graham cracker crust and smooth out with a spoon or spatula. Put the crust in the fridge to harden the chocolate.
  2. In a mixing bowl on medium speed beat the peanut butter, cream cheese and vanilla until smooth. Slowly, so the milk doesn't splash out, add the powdered sugar and milk, beating until smooth. Fold in the whipped cream. Set aside 1 cup of the peanut butter mixture in a separate bowl. Spread the remaining mixture in the prepared pie crust.
  3. Place the remaining 1/2 cup chocolate chips in a microwave-safe bowl. Microwave on high for 30 seconds, then stir. Microwave on 50% power for 15 seconds, stirring, until the chocolate chips have melted. Stir the melted chocolate into the reserved peanut butter mixture. Drop by tablespoons on top of the pie. Use a knife and gently swirl for a marbled effect.
  4. Cover, and freeze for 4 to 5 hours, or until firm.

This recipe was adapted from one of my very favorite dessert recipe book, Hershey’s Recipe Collection in 5-Ring Binder (5 Ring Binder Cookbook). Of course I had to add a little extra chocolate.

such a sad and touching story! i am the mom of two little girls and the wife to a peanut butter lover so this hit a little too close to home. i will making this pie for my husband this week with a heavy heart. my prayers are with that family!!!

That is so sad. Wow, we are contantly remind each day how fast our lives can change and I am always trying to make sure those I love know how much I love them. Making things like this is just another way to show that love! What a wonderful post Alli and thanks for the recipe. I WILL be making this for my sweet hubby tonight! I will post it next week and link the story back to your blog,etc. because i think everyone should be reminded of this

Last summer, we travelled across country on Amtrak and I had peanut butter pie for the first time. I’ve been searching for a recipe close to theirs ever since and this looks just about perfect! I can’t wait to try it!
