My baking and cooking life has really taken a hit lately. Babies will do that to you. Just when you think you have a moment to yourself, bam, they wake up screaming to be fed. Or changed. Or cuddled. Or bounced around the house in what can only be called the “baby dance”.
Sigh. Silly needy babies.
None the less, I still crave making new things. My Pinterest recipe board is overflowing with things I want to try. The kids board is filled with crafts I want to make with the kiddo. Alas, there is very little time for any of it. Time or brain power, because some days I may find an hour or two free, but my brain is too sleep deprived to function properly.
Sigh. Silly babies, keeping me up all night.
A few days after we came home from the hospital, bundle of joy in our arms, I did manage to create a new recipe. Something fun, something kid-friendly, something chocolately {of course} and peanut buttery. In short, it’s the perfect way to start out the day.
Peanut butter and Nutella waffles. Need I say more?
I have to admit, the kiddo wasn’t thrilled with these at first. But it turns out that the blueberry syrup I made, using frozen blueberries, was just way to watery, hence the reason I’m not sharing that part of the recipe. Waffles plus water equals a soggy mess. I can’t blame the kiddo for not wanting to eat them at first. But once I figured out what the problem was, and swapped out the soggy mess for new warm and crisp waffles, he gobbled them down. No syrup necessary.
Ingredients
- 2-1/4 cups whole-wheat flour
- 4 teaspoons baking powder
- 1/2 cup creamy peanut butter
- 1/2 cup nutella
- 1-1/2 tablespoons vanilla sugar or sugar
- 2 eggs, beaten
- 2-1/4 cups buttermilk
- 1/4 cup vegetable oil
- 1/4 teaspoon kosher salt
Instructions
- In the bowl of an electric mixer combine the first 8 ingredients. Beat on medium speed until combined.
- Preheat a waffle iron (on high heat if your waffle iron has heat settings). When the waffle iron is hot, spray surface lightly with the cooking spray, butter-flavored if you have it.
- Pour the batter into the waffle iron, being careful not to over fill. Cook until the waffle is golden brown. Serve hot with maple syrup and butter or fresh berries.
