Good morning, Alli-n-Son Readers! I’m Becca from Crumbs and Chaos. I blog with my 3 sisters, together we have 10 kids between us…and they’re all under the age of 6! Crazy? Yes. Chaotic? One thing we love around our house is barbecue. Since we live a good 45 minutes from our favorite BBQ restaurant, we decided to invest in an electric meat smoker. Very wise choice…who needs to go to a restaurant when you can make it yourself at home? Not me.
Well, we have LOVED it and so have our friends. I recently made pulled pork for a small crowd, which means there are leftovers. Every mom’s dream come true, a meal that we don’t have to cook. We ended up with leftovers for more than one meal, so I decided to add a twist to a regular quesadilla.
These are amazing! The gooey cheese, the sweet-spicy bbq sauce, the fresh cilantro and the crisp, golden tortilla all make for a perfect flavor combination. I haven’t listed exact measurements because this is more of a build-a-meal kind of dish, add what you love, adjust what you don’t. This is a quick week night meal that you can serve with a side of black beans and some corn on the cob.

Ingredients
- Flour Tortillas
- Pulled Pork (smoked, made in the crockpot or store bought)
- Your favorite BBQ sauce (you can always make your own)
- Sharp Cheddar Cheese, shredded
- Cilantro, chopped
Instructions
- Heat a non-stick skillet over medium heat.
- In a small bowl, heat pork in microwave until warm. Stir in bbq sauce.
- Build your quesadilla - one tortilla topped with cheese, then the saucy meat, cilantro and more cheese. Place a tortilla on top of that.
- Place in skillet and cook until golden and cheese is beginning to melt. Flip and do the same with the other side. Remove from pan, let stand a minute or two before cutting into wedges and serving with sour cream or anything else you like.

What’s better than quesadillas? BBQ pork quesadillas! They look and sound amazing! My hubby would certainly love to dig into these! Great guest post
