Sweet Tooth Friday: Dark Chocolate S’mores Pie

I know it’s not officially s’mores season anymore, and that’s a shame really. Why should s’mores have a season? Why can’t we enjoy the ooey, gooey, chocolatey goodness all year round?

Well, I think that we can. Especially if it’s in the form of a dark chocolate s’mores pie. Right now you will not catch me outside next to a camp fire, in the cold and rainy weather that has taken over lately. No way.

However, you will find me hunched over the stove, stirring and stirring and stirring. Breathing in the sweet scent of dark chocolate pudding cooking. And tasting, because I’m not about to put something on the table that I haven’t tasted. Especially when chocolate is involved.

Just because we aren’t toasting marshmallows over the fire, that doesn’t mean we are missing out on the toasted marshmallow experience. Because topping this indulgent pie, is a layer of toasted mini marshmallows. Complete with the crispy, browned outside and gooey inside. You won’t even miss the camp fire.

This recipe is dedicated to my pregnant sister, who requested a s’mores dessert the last time we got together. Who am I to say no to a pregnant lady? Also thanks to all of my Facebook fans who voted on which recipe I should share this week.

Dark Chocolate S’mores Pie

Dark Chocolate S’mores Pie


  • 1-1/3 cups cinnamon graham cracker crumbs
  • 1/4 cup granulated sugar
  • 4 tablespoons butter, melted
  • Pudding
  • 4 egg yolks
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 6 tablespoons dark cocoa powder
  • 1/4 teaspoon sea salt
  • 3 cups skim milk
  • 2 tablespoons butter, softened
  • 2 teaspoons vanilla extract
  • Topping
  • 2 cups miniature marshmallows


  1. Preheat the oven to 375 degrees. In a small bowl combine the cinnamon graham cracker crumbs and 1/4 cup of the sugar. Add the melted butter and mix until combined. Using the back of a spoon press the crumb mixture into the bottom and sides of a 9-inch pie pan. Bake for 8 to 10 minutes or until golden brown. Allow to cool.
  2. Pudding
  3. In a medium bowl beat the egg yolks with a whisk. Set aside.
  4. Combine the sugar, cornstarch, dark cocoa powder, and sea salt in a medium saucepan, set over medium heat. Slowly whisk in the milk, stirring until smooth. Increase the heat to medium high and bring the mixture to a boil, stirring often. Boil for 1 minute, stirring constantly, then remove the pan from the heat.
  5. Slowly whisk 1/2 cup of the hot chocolate mixture into the egg yolks. Whisk in 1 cup of the chocolate mixture, then return the chocolate and egg mixture to the saucepan, with the remaining chocolate mixture. Boil the mixture over medium heat for 1 minute, stirring constantly.
  6. Remove the pan from the heat and stir in the butter and vanilla extract. Pour the filling into the pie crust and allow to cool for at least 15 minutes, or chill it in the refrigerator overnight.
  7. Topping
  8. Heat the oven to broil. Cover the pie with mini marshmallows and broil it on the uppermost rack for about 30 seconds or until the marshmallows are lightly browned. Watch very carefully, the marshmallows can burn easily.
  9. Serve warm or chilled.
