Last week Friday, October 21, was National Caramel Apple Day. And I totally missed it.
Well, truth be told, I didn’t totally miss it. I had carmel-covered apples sitting in the fridge, just waiting for me. They were calling my name, and even more so, calling Hubs’ name. But it was a long week, and I just couldn’t muster the strength to finish them. Because caramel-covered apples alone are not good enough.
They also have to be covered in chocolate. Obviously. Dark chocolate. And then covered in crushed Oreos, dark chocolate peanut M&Ms or sea salt.
Layers upon layers upon layers of sweet goodness.
That’s my favorite kind of sweetness.
So, happy late National Caramel Apple Day. Even though it’s a little late, I think it’s still okay to enjoy one. Or five.
Ingredients
- 4-6 Granny Smith apples
- Popsicle sticks, 1 per apple
- 1 cup half and half
- 1 cup granulated sugar
- 1/4 cup honey
- 2 tablespoons unsalted butter
- 2 cups dark chocolate chips
- 2 tablespoons canola oil
- Chopped Oreos, dark chocolate peanut M&M’s, or sea salt
Instructions
- Insert one popsicle stick into the top of each apple. Place in the fridge.
- In a medium-sized pan, over medium-high heat, bring the half and half, sugar, honey, and butter to a boil, stirring often. Boil for 15-20 minutes, stirring constantly, until in turns a deep caramel color, or a candy thermometer reaches 245 degrees. Remove from heat.
- Dip the botom bottom of each apple in the caramel. Using a spoon pour the caramel over the apple, coating about 3/4 of the way up. Place on a parchment-lined baking sheet, and refrigerate until set, at least 15 minutes (or overnight).
- If the caramel starts to thicken, place it over medium-low heat until it starts to thin out again.
- In a small, microwave-safe bowl place the chocolate chips. Microwave on 50% power for 30 seconds. Stir, then repeat until the chocolate is almost melted, stirring every 30 seconds. Add the canola oil and microwave on 50% power for 30 more seconds. Stir.
- Dip the chilled, caramel-covered apples in the chocolate. Spoon the melted chocolate over the caramel, leaving just a little to peak through at the top. Dip the bottom half of each apple in the chopped Oreos, M&M's or sprinkle with sea salt.
- Chill the apples in refrigerator until completely set, about 45 minutes.
- Store apples in the refrigerator.
- If you have extra melted chocolate, dip a few Oreos in it. MmmMMMMMM!
