Last week on Sweet Tooth Friday I shared my lastest addiction. Peppermint mocha muffins. It was a labor of love to get the recipe right, but I did.
But, I couldn’t just stop there, now could I? These muffins needed something to join them in the morning. Muffins aren’t breakfast alone, unless paired with coffee. Am I right?
Of course I am. Actually, any breakfast isn’t breakfast without coffee.
Taking my handy-dandy base for coffee creamer, I’ve added to my recipe collection which already includes Pumpkin Spice, Chocolate Almond and French Vanilla. Please welcome Peppermint Mocha coffee creamer. It’s like Starbucks, only easier.
Don’t get me wrong, I’ll still be enjoying Peppermint Mochas from Starbucks, I can’t go the season without one, or 10. But this is a great option when the craving strikes and I can’t leave the house. Or don’t want to, because it’s just too flipping cold outside.

By the way, it’s in the 30′s here, and if that’s already too cold, I’m in trouble once January comes around. I’ll have to keep plenty of this creamer on hand to make it through.
Ingredients
- Sweetened condensed milk {make your own}
- 1-1/2 cups skim milk
- 3 tablespoons cocoa powder
- 1 teaspoon peppermint extract
Instructions
- Combine ingredients in a container with a cover. Shake until combined. Or use an immersion blender or traditional blender and blend until smooth. Store, covered, in the fridge and shake/stir before using.

Anyway, I am so excited to try this recipe. I’m obsessed with peppermint mochas and was about to splurge on some peppermint syrup from Starbucks because I couldn’t replicate this just with cocoa and peppermint extract. I made this. Yum! I didn’t make my own sweetened condensed milk, so I used one can of it and it was pretty sweet. I could have added more cocoa, too. But O.M.G. It tasted like the real thing.
