I’ve been tempting some of you with this recipe for weeks now. In fact, I was almost forced to test it out, before I made it for one of our early Christmas celebrations.
I say almost forced, because really, you don’t have to try to hard to get me to make something that is so chocolatey it could almost kill you. It’s so rich that one piece will leave you feeling satisfied, full beyond your dreams, and craving more. All at the same time. It’s a magic cheesecake. Topped with candy canes, as all magic Christmas foods should be.
Whether it’s in the mini form or the full-size form, this cheesecake will not disappoint.
Wait, no, I take that back. It will disappoint because there will be zero leftovers. And you will want more of this. I promise you.
Ingredients
- 6 tablespoons melted butter
- 1-1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 2 eggs
- 1 cup plus 2 tablespoons all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon fine sea salt
- 3 (8 oz) packages cream cheese, softened
- 3/4 cup granulated sugar
- 4 eggs
- 1/4 cup heavy whipping cream
- 2 teaspoons vanilla extract
- 4 teaspoons peppermint extract
- 1/4 teaspoon fine sea salt
- 2 cups dark chocolate chips
- Crushed candy canes
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9-inch spring form pan with nonstick spray.
- Using an electric mixer, combine the butter, sugar, vanilla and peppermint extract until smooth. Add eggs, mixing until blended. Mix in the flour, cocoa powder, baking powder and sea salt until well blended.
- Spread in the prepared pan. Bake for 25-30 minutes or until the edges begin to pull away from the side of the pan.
- While the brownie is baking, prepare the cheesecake layer.
- Using an electric mixer beat the cream cheese and sugar until smooth. Gradually add the eggs, whipping cream, vanilla and peppermint extract and salt. Beat until smooth.
- Place the chocolate chips in a small microwave-safe bowl and microwave for 30 seconds on high. Stir. Continue microwaving for 30 seconds and stirring until melted. Slowly blend the melted chocolate into the cheesecake batter.
- Remove the brownie from the oven and our the cheese mixture over it.
- Return to the oven and baking for 45 to 50 minutes or until the center is almost set.
- Remove from the oven and place on a wire rack. Using a knife, loosen from the sides of the pan.
- Cool to room temperature and remove the sides of the pan.
- Cover and refrigerate for severals hours until cold.
- Before serving sprinkle with crushed candy canes, pressing them lightly onto the surface.
Notes
For mini cheesecakes, prepare brownie layer as above. Line 24 muffins tins with muffin liners. Divide the brownie batter equally between the 24 cupcakes. Bake for 10 minutes.
Prepare the cheesecake layer as above. As soon as the brownie comes out of the oven, pour the cheesecake mixture over the brownie mixture. The cheesecake will come to the top of the tins. Bake for 25-30 minutes or until the tops are set and a tooth pick inserted in the center of one cheesecake comes out clean.
Cool to room temperature, then remove from the muffin tins. Cover and store in the fridge. Before serving sprinkle with crushed up candy canes.
