Secret Recipe Club: Mocha Chocolate Chip Cookies

Secret Recipe Club

It’s been over seven years now since Hubs and I got married. No, this isn’t a post about our wonderful marriage {although it is pretty much wonderful}. This is about the most unbelievable cookie I’ve ever eaten. On our honeymoon. In San Francisco.

It was warm, fresh out of the oven. Gooey. Chocolatey. Rich with just the right amount of sweetness. Giant, like any good cookie should be.  It was a brownie in cookie form. Only better. Much, much better.

I have never in my life tasted a cookie like this. And until recently, I haven’t tasted one since then. And I’ve searched for a similar cookie. Believe me, I’ve searched.

Then, my latest assignment for the Secret Recipe Club showed up in my inbox and all of my cookie dreams were answered. Liv Life, a blog dedicated to living life to its fullest through food, photography, and travel, has given me the cookie recipe I’ve been searching for.

Mocha Chocolate Chip Cookies

Chocolatey. Deep, rich chocolate. With a hint of coffee. Followed up with more dark chocolate. Of course. The recipe for Chocolate Espresso Cookies was just what I needed to create my own version of those cookies I fell in love with years ago. With a few tweaks, some white chocolate chips, and lots of taste testing, I created a cookie that rivals the one from that little bakery in San Francisco who have been haunting my cookie dreams ever since.

Perhaps best of all, today is my birthday! Wait, wait, no, it’s not my birthday. I’ve stopped having those. Instead, it’s Allison Day, a day dedicated to the awesomeness that is me. To celebrate I’m sending a giant plate of these cookies to everyone! Well, I would, if I could. Instead, I’m sharing the recipe, because every girl deserves a little {or a lot} of chocolate on her birthday.

Happy Allison Day to me!

Mocha Chocolate Chip Cookies

Mocha Chocolate Chip Cookies

  • 2 cups dark chocolate chips, divided
  • 1/2 cup unsalted butter, cut into pieces
  • 6 tablespoons unsweetened dark cocoa
  • 3 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1-1/2 tablespoons finely ground coffee, dark roast for the best flavor
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 3/4 cup white chocolate chips

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper or silicone liners.
  2. In a microwave safe bowl combine 1 cup dark chocolate chops and butter. Microwave on high for 30 seconds, stir. Continue to microwave for 30 seconds and stirring until the chocolate chips have melted, about 1-1/2 minutes total.
  3. In the bowl of an electric mixer beat together the eggs, sugar, vanilla, and ground coffee on high speed until very thick and pale, 3-4 minutes. Slowly mix in the melted chocolate mixture.
  4. Add the flour, baking powder, cocoa powder and salt into the chocolate mixture and stir until just combined. Stir in remaining 1 cup dark chocolate chips and white chocolate chips.
  5. Drop batter, about 2" sized balls, onto the prepared baking sheets and bake for 12-14 minutes, or until puffed and cracked on top. Cool cookies on baking sheets for one minute. Transfer the cookies to racks to cool completely.
