Orange Triple Berry Muffins

by Allison @ Alli 'n Son on January 12, 2012

Okay, okay, I give. I can’t take the sweets anymore. I’m not talking chocolate. I’m talking the cookies and brownies. The fudge and the chocolate covered cherries. The twix bars and cookie dough cupcakes.

I’m talking all of it. I’m so over it.

I’m done with sweets.

Okay, okay. You got me. I’m so not done with sweets. I’m way too addicted.

But I am craving a healthier way to get my sugar fix. A sweet way that I can begin the day without feeling too guilty about it. Because these muffins, have fruit. That’s where their sweetness comes from.

And some sugar. Fine. There’s sugar too. But the fruit, that’s the best part.

So, from now on, I’m starting my day with one of these muffins.

Orange Triple Berry Muffins

Well, maybe not every day. Somedays only a chocolate chip muffin or peppermint mocha muffin will do. But for those days when I need something a little less indulgent, but something that will still satisfy my sweet tooth, I’m reaching for one of these orange, triple berry muffins.

And there’s nothing you can do to stop me.

So. There.

Orange Triple Berry Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 12

Serving Size: 1 muffin

Orange Triple Berry Muffins

Inspired by pretty delicious

  • 1-1/2 cups all purpose or white whole wheat flour
  • 1 cup old fashioned oats, plus more to sprinkle
  • 3/4 cup packed brown sugar, plus more to sprinkle
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of finely ground sea salt
  • Zest from one orange
  • 2 large eggs
  • 1/2 cup canola oil
  • 1/4 cup unsweetened apple sauce
  • 1 cup frozen berries (I used a mix of raspberry, blackberry and blueberry)

  1. Preheat oven to 400 degrees. Line a 12-cup muffin tin with paper liners or spray with nonstick spray.
  2. In a large bowl whisk together the flour, oats, sugar, baking powder, baking soda, salt and orange zest. Set aside.
  3. In a medium bowl whisk together the eggs, oil and applesauce. Pour into the flour mixture and stir until well combined. Fold in the frozen berries.
  4. Using an ice cream scoop, fill each muffin cup about 3/4 full, approximately 1 scoop. Sprinkle with oats and brown sugar, pressing lightly into the batter.
  5. Bake for 20 minutes, until golden brown and a tooth pick inserted into the center comes out clean.
  6. Cool in the pan for 10 minutes, then move to a wire rack to cool completely. Serve warm or at room temperature.

Remove any large berries, especially if you are using blackberries, as they tend to create soggy spots in the muffins.

To make these muffins even healthier, replace all of the oil with applesauce. This will change the texture of the muffins slightly, they will be a little chewy and denser, with a strong apple flavor.

Hello Allison.

I shared my linkups and then read about your asking for posts that are recipe – not posts about recipes. I was a confused – not sure if my “Top 10 ” posts fit or not. I hope so, but whatever you decide.

Your muffins look wonderful – your photos are simply beautiful!

I love that you put the flavor orange in the muffins. I have never seen that before and I love it! We adore any type of muffins here as that is the only thing other than waffles and pancakes that little man will eat:)

Where is the orange in the recipe; you had my attention as I had oranges to use. They sound delicious, but did you leave out an ingredient?

Thanks for pointing that out. It’s the zest from one orange. I’ve updated the recipe.
