Turkey and Apple Panini

The other day Hubs looked at me, with tears in his eyes, and said

“I think I benefit more from your Christmas present than you do.”

To which I replied

“Well, I probably deserve a new present then.”

And yet, I have not received a new gift. Yet.

What is this magical gift that Hubs uses as much as, if not more than, I do? A panini press. This beautiful, breath-taking Cuisinart Griddler which makes my most favorite lunch in the entire world: paninis.

I love paninis. If I could eat them every day, I would. I totally would.

Actually, I pretty much do now that I have this baby in my life. And Hubs does too. Come to think of it, so does the kiddo.

I totally got gipped in the gift department.

I’m expecting my make-up Christmas gift any day now.

In the meantime, at least I won’t starve, because I’m filling my belly with sandwich after sandwich. After sandwich.

Turkey and Apple Panini

One of my favorites in a simple little sandwich. But don’t let it fool you. There’s flavor in there. Plenty of flavor. It’s also filled with healthy ingredients, like spinach, apples and even a touch of Greek yogurt. I like to think that this sandwich makes up for The Pioneer Woman Cinnamon Rolls that I made, and possibly over-enjoyed, this past weekend.

On a side note, have you had these cinnamon rolls? The hype, it’s totally justified. They are amazing.

Anyway, back to this sandwich.

Turkey and Apple Panini

It’s just the thing if you are looking for a quick, healthy and totally satisfying lunch. There’s crunch. There’s a hint of sweetness. And, there’s the toasty, crunchy, warm bread which transforms an ordinary sandwich to something magical: a panini.

Turkey and Apple Panini

Prep Time: 5 minutes

Cook Time: 5 minutes

Yield: 2 sandwiches

Inspired by pretty delicious

Ingredients

  • 4 slices crusty bread, such as Italian
  • 2 tablespoons hummus {olive oil and sea salt is my favorite}
  • 2 tablespoons nonfat, plain Greek yogurt
  • 1 crispy apple, such as Fuji, thinly sliced
  • 8 slices deli turkey
  • 4 slices provolone cheese {optional}
  • Spinach leaves, a small handful

Instructions

  1. Preheat a panini griddle to medium-high.
  2. In a small bowl stir together hummus and Greek yogurt. Set aside.
  3. Spray one side of each slice of bread with butter-flavored nonstick spray.
  4. On the other side of each bread slice spread the hummus mixture.
  5. Layer the turkey, apple slices and spinach leaves. Top with cheese, if using.
  6. Toast in the panini griddle until the turkey is hot, cheese is melted, and the outside of the bread is golden brown and crispy.

Notes

You can of course make this on the stove, grilled cheese-style. Heat a pan over medium heat on the stove, then toast each sandwich until the bread is golden brown, the turkey is heated and the cheese is nice and melty.

this sounds perfect for the kids and us. My son loves his sandwiches but they have to me grilled or toasted- never just plain old bread- that would be a down right shame! LOL! Love the apples

Same here. The only kind of sandwich I eat not toasted is peanut butter. But even those are tasty toasted too.

Yumm!! We have a cuisinart panini press/griddle too and LOVE it – I love spinach in my paninis. There’s nothing quite like that crunchy toasty warm bread to make any sandwich a whole new creation! :)

Yum! I love Paninis and I love the combination of turkey and apples. I don’t have a panini press, but I use my grill pan and a cast iron skillet and that works pretty well. I like the addition of the spinach and the hummus. Not only are they delicious. but it’s an excellent way to sneak super healthy ingredients past those finicky eaters in the family. Thanks for sharing it!
